Mandorle, noci e nocciole, arachidi e noci brasiliane, sono un alimento sano\u00a0soprattutto se non sono trattate cio\u00e8 se la\u00a0frutta secca\u00a0non \u00e8\u00a0tostata. La tostatura infatti\u00a0pu\u00f2\u00a0alterare con alte temperature i grassi buoni prevalentemente insaturi contenuti nella\u00a0frutta secca\u00a0\u2013 spiega la dottoressa <a href=\"http:\/\/www.humanitas.it\/medici\/manuela-pastore\" target=\"_blank\" rel=\"noopener\">Manuela Pastore<\/a>, dietista clinico\u00a0della Direzione Sanitaria dell\u2019Istituto Clinico Humanitas.\u00a0\u2013 \u00a0Anche se \u00e8 sicuramente pi\u00f9 facile trovare e consumare la\u00a0frutta secca\u00a0gi\u00e0 sgusciata \u00e8 invece preferibile acquistarla ancora nel suo<strong> guscio<\/strong> perch\u00e9 \u00e8 sia il suo packaging pi\u00f9 salubre sia protegge il frutto da possibili inquinanti. Tra la\u00a0frutta secca, mandorle e nocciole sono spesso vendute senza la loro pellicina marrone, ma \u00e8 meglio mangiarle non pelate perch\u00e9 la pelle contiene <strong>antiossidanti<\/strong> preziosi. Infine, anche se \u00e8 piuttosto comune trovare\u00a0frutta secca tostata, privata della pellicina e\u00a0salata, per evitare <strong>ritenzione idrica e ipertensione<\/strong>, meglio non mangiare anche la\u00a0frutta secca salata, che spesso \u00e8 anche\u00a0tostata, e quindi perde i suoi benefici nutrienti.\u00a0Se si vuole <strong>macinare<\/strong> la\u00a0frutta secca\u00a0\u00e8 preferibile farlo all\u2019ultimo minuto perch\u00e9 luce o ossigeno ne alterano gli olii.
